Joe C. Roybal, 81, went home to be with our Lord and Savior on Friday, February 11, 2022.
Joe was born and raised in Peña Blanca, New Mexico. He was a lifelong member of Our Lady of Guadalupe church. He was dedicated to his family, enjoyed the outdoors through hunting and camping, and embraced life. Joe is best known as the owner of Chaparral Racing Stables, where he spent his time training his horses and pursued his passion for horse racing. He was well-known throughout New Mexico, and the hundreds of photos of him in the winner’s circle validate his success.
Joe is survived by his loving wife Rosemary Roybal of 59 years; three children, Carolyn Pargas (Stan), Karen Perez (George), and Joe Roybal (Anna); sisters Piedad Garcia and Rosina Larrañaga; mother-in-law Lisaida Ortiz; and brother-in-law Jack Cooley, brother-in-law Robert Ortiz Sr., brother-in-law Steven Ortiz (Jeannie), sister-in-law Lorraine Ortiz. He is also survived by his grandchildren: Robert Pargas, Christine Pargas (Brian), Chris Pargas (Giovanna), Amanda Daugherty (Zach), Jacob Perez, Briana Cooper (Jordan), Amber Deal (Clayton), Jasmin Roybal, and Sonia Roybal; and his great-grandchildren: Rayisa Daugherty, Ava Daugherty, Olivia Daugherty, Emma Deal, Angelo Pargas, Joseph Pargas, Aubrianna Pargas, Nico Pargas, Zeus Pargas, Gemma Pargas, Leo Herrera, Isaac Herrera, and Thomas Herrera.
Celebration-of-life service will be held at Our Lady of Guadalupe Catholic Church in Peña Blanca, New Mexico at 11:00 on Saturday, March 12, 2022. A rosary will be recited at 10:00 before mass. A reception will be held at the Peña Blanca Gym following internment.
